Spaghetti garlic, oil and chilli peppers is a super-fast and simple dish brimming with tradition and taste!

Ingredients

– 320g of Spaghetti

– 2 cloves of  Garlic

– 60g of Clemente Oil “Le Masserie del Parco”

– 1/2 Chilli pepper

– 1 Spring of Fresh Parsley

– Salt as required.

Preparation

Heat the oil in a saucepan and fry the sliced garlic on a low flame together with the chilli pepper minced into small pieces.

When garlic gets browned, add a pinch of salt and turn the flame off.

Add a bit of minced parsley. Boil the ‘al dente’ spaghetti and then strain and season them until they are hot.

Broad beans and Chicories

Ancient dish coming from the poor farming tradition rediscovered by great chefs. Dish rich in genuineness and tradition. Easy to prepare.

Ingredients

– 400g White broad beans

– 500g Wild chicories

– 1 celery  Stalk

– 3/4 Ripe Tomatoes

– 1 Onion

– Salt as required.

Preparation

After soaking beans into salt water for one night, cook them into a pot.

As soon as they start boiling, strain and pour hot water over them. Add an onion, a celery stalk and tiny pieces of ripe tomatoes.

Clean, wash and boil wild chicories separately in hot water. When they are cooked, arrange a plate at the centre table and put the mashed white beans all around.

Dress everything with plenty of EXTRA VIRGIN OLIVE OIL DOP RE MANFREDI, fried or roasted croutons.

Ingredients

– 1 Slice of Monte Sant’Angelo home bread

– Tomatoes from Tavoliere

Extra Virgin Olive Oil D.O.P. Re Manfredi

– A pinch of Salt from Margherita di Savoia.

– A pinch of Rosemary and Rocket

Preparation

Prepare some Monte Sant’Angelo home bread in the shape of bruschettas.

If the bread is too chewy, we do suggest dampening it a bit.

“Spread” some tomatoes from Tavoliere over the bruschetta slices and sprinkle with rosemary…

Add a good quantity of Extra Virgin Olive Oil D.O.P. Re Manfredi.
Lastly add a pinch of salt and rocket.
Notes:
You can also add some slices of buffalo provola or black olives.
Serve with an excellent Red wine.

Orecchiette with Turnip Greens

Typical Apulian speciality which is commonly regarded as a national dish. Handmade orecchiette, where possible, shall be seasoned with 100% Italian Extra Virgin Olive Oil.

Ingredients

– 500gr. di Apulian Orecchiette

– 1 jar of turnip greens plunged in Extra Virgin Olive Oil

– 2 Anchovies

– 2 Cloves of garlic

Chilli pepper

Preparation

Pour 2 small tablespoons of Extra Virgin Olive Oil on the bottom of a saucepan and fry the salted and filleted anchovies, 2 whole cloves of garlic, a crumb of shredded stale bread and chilli pepper.. As soon as the crumb gets browned, pour the jar of green turnips into the saucepan and mix well trying not to burn the garlic.

Cook orecchiette separately in hot water. Drain and sauté them into the saucepan together with the already arranged compound. Serve the dish in terracotta terrines and season them with a pinch of extra virgin olive oil..

Notes:
The crumb is not essential but we do recommend you trying it at least once.
